Tropical Grilled Kabobs

Dylan and I loooove grilling. We tend to grill out every sunday evening in the summer. This is one of my all-time favorite grilling recipes. The teriyaki sauce on these kabobs is like liquid heaven.

  1. In a small saucepan, combine the brown sugar, soy sauce, pineapple juice, garlic, pepper, and salt with a whisk. In a small bowl, mix together the water and cornstarch. Slowly whisk into the saucepan.
  2. Boil the mixture for 1-2 minutes until it just starts to thicken. Remove from heat and save ¼ cup of the sauce for later. Add the chicken to the sauce and let it marinate in the fridge for at least 30 minutes.
  3. Once the chicken has marinated, begin assembling your skewers by threading on the chicken, pineapple, peppers, and red onion.
  4. Grill for 7-8 minutes on each side until the chicken is cooked through. Remove from the grill and brush with reserved sauce. Top with green onions if desired.
