Crockpot Chicken Tacos

Get ready to thank me for the biggest lifesaver of 2021 — or possibly your whole life because this chicken taco recipe is really that good, that easy, and that cheap. This is a weekly staple around here. You.. are.. welcome.

 

For the chicken:

  • 2 lbs chicken breasts

  • 1 packet taco seasoning (or 2 tbsp of homemade taco seasoning)

  • 16 oz salsa (I prefer a chunky type for this)

  • 1/3 cup chopped cilantro

  • 2 limes

For the tacos:

  • Tortillas

  • Sour cream or Greek yogurt

  • Cotija cheese

  • Avocado

  • Pickled red onions

  • Mango salsa


Makes 4 Servings | Total Time: 6 hours


  1. Combine the chicken breasts, taco seasoning, salsa, cilantro and juice of two lives to a crockpot. Mix well and be sure the chicken is fully covered, including the bottom.

  2. Cook on high for 4 hours or on low for 6-7 hours.

  3. Use tongs to move chicken to a large bowl and shred with two forks (or a hand mixer). Add about 1/2 cup of juices from the crockpot or as much as you’d like to moisten the chicken.

  4. Serve on tortillas with all the extras.
