Summer Cajun Mixer

We just had a weekend of heat indexes around 120 degrees and coming up with dinner ideas after a hot weekend like that was not easy — we chose to do some dinner salads and salmon but I wanted something that spoke to these southern summer days, and what better do that with than a bowl full of cajun. Sausage, corn, okra and green beans drizzled with a simple vinegar dressing.. ooh ooh ooooh.

Ingredients

For the fried okra —
For the dressing —

Instructions

To make the dressing —
  1. Combine all ingredients plus 1 tsp of cajun spices in a small bowl and whisk to combine. Set aside.
To make the fried okra —
  1. Preheat oven to 350º F. Combine the corn meal, flour and salt in a medium bowl and toss in the okra. Mix it all up so each okra slice is thoroughly covered.
  2. Heat the 1/4 cup canola oil in a large saucepan over medium-high heat. Once the oil is hot, add the okra and let brown for about 3-4 minutes. Gently stir the okra so that each side gets slightly browned.
  3. Transfer to a baking sheet and cook in oven for about 10 minutes until fork tender. Remove from oven. Leave on pan and leave oven on while you continue with the other steps.
To make the blackened corn tiles —
  1. Combine the melted butter and 1 tsp cajun spices. Brush each ear of corn with the spiced butter.
  2. Heat up a grill pan over medium-high heat and brush with canola oil.
  3. Place each ear of corn on the pan and let cook on one side for about 5-6 minutes before turning. Beware of popcorn, some kernels will pop and it can be hot.
  4. Keep rotating until each side has some color/char on it. Remove to a cutting board.
  5. Using a sharp knife, slice down the side of the corn as deep as you can so some kernels stay clustered in a “tile”. Add the corn to the baking sheet with the fried okra.
To make the green beans —
  1. Bring a large pot of salted water to a boil. Add the green beans and boil for about 4-5 minutes until soft. Drain and place on baking sheet with corn + fried okra.
To make the kielbasa —
  1. Using the same grill pan as the corn, place the sausage slices in the pan over medium heat. Cook for just a few minutes, letting the sides get grill marks and steamy hot. Add to the same baking pan as the rest and add a few small cubes of butter on top of it all.
To finish it all off —
  1. Place everything back in the oven for 3-4 minutes or until its all hot and steamy. Remove from the oven and divide among plates.
  2. Drizzle with the vinegar dressing and enjoy!
