Homemade Marshmallows

And here comes your newest winter tradition - homemade marshmallows! These are sure to be the fluffiest, yummiest, and most worthy marshmallows you’ve ever had. You only need a few ingredients, a countertop mixer, and a dash of patience to get these delectable goodies.

 

Ingredients—

  • 1 packet of gelatin

  • 1/2 cup cold water, divided

  • 1 cup sugar

  • Pinch of salt

  • 1 tsp vanilla

  • Powdered sugar

 

Directions—

  1. Grease a 9-inch square pan or a glass baking dish with non-stick spray and lightly coat with powdered sugar.

  2. In a small bowl, soak the gelatin in 1/4 cup of cold water. Set aside. Place the remaining 1/4 cup of water and sugar in a pot and stir to dissolve over medium heat. Add the gelatin and bring to a boil, without stirring it, for one minute, we’re aiming for 240°F.

  3. Carefully remove from the heat and pour in to a bowl of an electric mixture. Let it stand for 5 minutes. Stir in the salt and vanilla extract. Beat with the whisk attachment of the electric mixer on low for 2 minutes then increase to high until soft and doubled in volume, about 10-15 minutes.

  4. Pour into the prepared pan and smooth with a offset spatula. Cool in the pan uncovered, until firm, minimum 3 hours. Lightly dust the top with sifted powdered sugar.

 

— Marshmallow Flavors —

Chai Tea

Add 1-2 bags of chai tea to the pan of syrup mixture to steep.

Peppermint

Add 1 tsp of peppermint oil and red food coloring to mixer before beating.

Espresso

Add 1 tsp of espresso powder to mixer before beating.

Gingerbread

Add 1 tbsp vanilla, 1 1/2 tsp of ginger, cinnamon and cloves. Replace sugar with brown sugar.

 

Marshmallow Shapes —

Cookie cutters work great for homemade marshmallows. Amp up your holiday sweets and have a day decorating shaped marshmallows with royal icing, fondant and colorful sprinkles.

 

Dipped Marshmallows —

You can also get creative and try dipping your fresh marshmallows in dark chocolate, white chocolate, or drizzled with caramel sauce.
