French Onion Soup

I’ll be honest, it took me a long time to finally try french onion soup — something about it made me nervous. But once I did, I found my new winter craving. So here’s my favorite take on this heart soup.

Ingredients

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the onions, salt, and pepper. Reduce heat to low and cook for about 40 minutes or until onions are very soft.
  2. Increase heat to medium and cook for 10-15 minutes until golden brown. Stir in the vinegar, tamari, thyme and garlic. Sprinkle on the flour and stir for 2 minutes. Add the broth and simmer over medium heat for 30 minutes.
  3. Preheat the oven to 450 and line a baking sheet with parchment paper. Place the baguette slices topped with cheese on the baking sheet. Bake for 8-10 minutes until toasted and cheese is melted.
  4. Spoon a portion size of soup into a bowl, top with a baguette slice and sprinkle fresh thyme, a pinch of red pepper flakes and extra cheese.
