Honey Snap Salmon

Before I start.. I have to preface this with a plea for you to have an open-mind and lean into that adventurous spirit that I know you have. Because when you read the ingredient list for this, you’re going to say “….um what?” but when I tell you that my husband almost had tears in his eyes after the first bite, you know it’s the real deal!

This salmon is sweet and spicy and sticky and it’s topped on a bed of fluffy couscous filled with snappy peas, tangy peppers and crunchy pistachios.

It’s a damn dream, y’all.

Ingredients

  1. Add about 2 tbsp of the oil from the pickled peppers to a saucepan over medium heat.
  2. Coat the salmon fillets with curry powder, salt + pepper. Add them to the pan once hot. Season the other side with curry powder, salt + pepper.
  3. Zest the orange and slice in half. Chop up the snap peas, 1/2 cup of pickled peppers and the pistachios. Set aside.
  4. Bring a water kettle to a boil. Put your couscous in a large bowl. Once water is boiling, pour over couscous just until the top is wet. Cover the bowl and let rest for about 5 minutes.
  5. Once the salmon has cooked for about 5-7 minutes, flip the salmon. Juice 1/2 of the orange on top and add the orange zest and the honey to the pan. Let cook for about 2 minutes.
  6. Once the couscous is done, remove the lid and fluff with a fork. Add in the snap peas, peppers, and pistachios. Season with salt and pepper.
  7. Use a spoon to gently baste the salmon with the honey sauce in the pan. Once the salmon has reached an internal temp of 145°F, remove from heat.
  8. To plate, start with a bed of couscous and top with a salmon fillet. Add extra honey sauce and finish it off with some torn mint, if preferred.
