Cherry Pie

Valentine's Day is coming up!

I actually never had cherry pie before this. But they seem so perfect for Valentine's day so I had to give it a try, and yes, I'm in love (or else I wouldn't be writing this).
This is perfect for your upcoming date or even better for your galentine's day! 
It's super easy and it's decently quick. So it's great for a last minute, morning-of dessert.

Ingredients:

Pie Crust:

  • 1 1/4 cups flour
  • 1/2 tbsp sugar
  • 1/4 tsp salt
  • 1/2 cup cold butter
  • 7 tbsp cold water

Filling:

  • 1 21oz can cherry pie filling

Topping:

  • 2/3 cup flour
  • 2/3 cup sugar
  • 1 tsp almond flavoring
  • 1/2 cup cold butter

Directions:

Pie Crust.

  1. To make pie crust; mix flour, sugar, and salt in a large bowl.
  2. Dice up the cold butter; add it to the flour mixture. Using your hands, mash up the ingredients until the butter has broken up into small pea-sized chunks or flakes.
  3. Add the 7 tbsp of cold water, and stir with a spoon. Once the dough has started to form, use your hands once more to knead the dough into a smooth ball.
  4. Flatten the ball and wrap with plastic wrap.
  5. Refrigerate 1 hour or overnight.

Filling & Topping.

  1. Once your dough has sat in the refrigerator, remove and roll out onto a lightly floured surface.
  2. Preheat oven to 375 degrees f.
  3. Place the rolled crust into a greased 9 inch pie pan. Stab the bottom of the crust with a fork in 5 different places.
  4. Fill the pie with your filling, making sure its evenly spread.
  5. For the topping; place all the ingredients into a large bowl. Using your hands again, mash up the butter and the dry ingredient mixture until crumbs begin to form. Make sure the crumbs are mostly even in size, breaking up any large pieces. This may take a little longer than the crust, so don't worry.
  6. Sprinkle the crumb topping onto the pie, making sure its evenly coated.
  7. Trim the edge of the crust. Cover the crust all the way around with tin foil.
  8. Bake for 15 minutes, then remove the foil.
  9. Place back into the oven for another 15-20 minutes or until the crust/topping turn a nice golden brown.
  10. Let cool for 30 minutes & enjoy!
